
This holiday-worthy margarita doubles down on ginger, with spicy-sweet ginger syrup in the shaker and ground ginger mixed into the salty-sweet rim. Orange bitters add aromatic complexity, while a splash of seltzer keeps things light and refreshing. Ginger syrup is easy to find on many grocery store shelves, but you can also make your own.

Step 1
Mix 2 tsp. sugar, 1 tsp. kosher salt, and 1 tsp. ground ginger, on a small plate. Wet rim of glass with squeezed lime half, then dip glass into sugar mixture to coat rim. Set aside.
Step 2
Combine 1½ oz. tequila, preferably Patrón Silver, 1½ oz. fresh-squeezed lime juice, ¾ oz. ginger simple syrup, and 2 dashes orange bitters in a cocktail shaker filled with ice. Shake for 30 seconds or until exterior of shaker is too frosty to hold. Strain margarita into prepared glass and top with club soda or seltzer and a rosemary sprig.
