Well, here it is, the bane of North Carolina barbecue. I don't know if it's the addition of mustard that brings frowns to the faces of North Carolina barbecue purists or the fact that this is a South Carolina sauce, but this sauce certainly illustrates the diverging tastes and traditions of barbecue in the Carolinas.
Throughout the 1700s, South Carolina drew a large contingent of immigrant German families. These new settlers brought with them ideas and advancements on ways to farm, as well as an affinity for the flavor of mustard. Even today, many of the families that produce mustard barbecue sauce have a German heritage, most notably the Bessinger family.

Perfect barbecue sauce? That sounds pretty arrogant. With all the brands and homemade recipes out in the world, can one really be that good? Well, put it this way: If you can get a bunch of vinegar-loving good ol' boys from North Carolina to go gaga over a sauce, then I think it has some validity.
Now, Virginia Pruitt, of Bonner Springs, Kansas, is way too modest to proclaim this sauce much beyond just "good." This is a family recipe that has roots in several states, with a little experimentation over 50 years. Ms. Pruitt got the recipe from her aunt-in-law, Ruth Reed, who lives in Denver. The original version came from Ruth's mother, who was reared in Kentucky.
The sauce is a great blend of sweet, tart, tang, and clingability. I have tried it on ribs, brisket, smoked pork butt, and grilled chicken with fabulous results. IF you want a one-stop barbecue sauce, this may be the one.

This is the dish that started my love affair with grilling and barbecue. Growing up a stone's throw from Lexington, North Carolina—the World barbecue headquarters—I always visited a barbecue joint to get my pork fix. We'd either eat it there or take it home in quart containers to reheat in a silver chafing dish. After college, I said good-bye to the barbecue joints and moved north. If I was going to enjoy pulled pork more than once or twice a year when I went home, I just had to teach myself how to make it. Here is my tried-and-true version made most often on a gas grill, no less!

The addition of ketchup in this slightly sweeter vinegar sauce distinguishes it from simpler Eastern North Carolina vinegar sauce. I prefer this sauce not only because I grew up with it—I like the added flavor and the pink color that the ketchup gives the sauce. To turn this sauce into an Eastern sauce, add 1 cup of water and eliminate the brown sugar and ketchup.
This sauce is used to make North Carolina Style Pulled Pork and North Carolina Coleslaw . You will need to double this recipe to sauce both the meat and the slaw.

There are three kinds of Southern slaws: barbecue slaw, cole slaw, and yellow slaw. Barbecue slaw is a western North Carolina tradition made with chopped cabbage, pungent vinegar, and red pepper. Cole slaw is what most people in Georgia consider slaw—primarily cabbage and mayonnaise. Yellow, or mustard, slaw is more commonly found in South Carolina and eastern North Carolina (its main ingredients are cabbage and mustard). Try a spoonful of this slaw on Pulled Pork Sandwiches with Mama’s Barbecue Sauce (page 81) for a sloppy, glorious treat.

I’ve often spoken of all the interesting and wonderful people who cross my path. Well, Wayne Brokke is one of those people. Wayne had seen me on QVC several times, and when the opportunity arose for a trip to Savannah, he made a special point of coming in to meet me. We had a great time getting to know each other. Wayne is the owner of Wayne’s Bar-B-Que in Baltimore, where he also does cooking segments for a local television station. When I mentioned to Wayne that I was writing another cookbook, he graciously offered to share a few of his recipes. They are Wayne’s Cranberry Sauce, and the following recipe, which is a five-time winner of the Maryland Old Bay Soupstakes Critics and People’s Choice Award. Thanks, Wayne, and continued good luck to you!

This savory dish is named for one of the streets in historical Charleston, South Carolina. Crookneck squash is a summer squash that is available year-round in certain regions. You can substitute zucchini or even a winter squash, such as butternut or acorn, depending on what’s in season in your area.

Chef Tory McPhail writes: "I was 19 years old and just out of culinary school when I first started at Commander's Palace. Despite my training, nothing prepared me for the pressures of working in a fast-paced kitchen, or in a restaurant of such high quality. I think my success came down to sheer effort and a lifelong passion for cooking. Even as a kid I loved playing with cookie and pie dough.
"After a seven-year absence, which I spent working abroad and opening a new Commander's Palace restaurant in Las Vegas, I came back to New Orleans last year. Since returning I've enjoyed cooking for my friends. On the weekends we'll go fishing, and then I'll grill our catch and serve it along with a fresh salad. That meal combines the two best things about living in the South — lots of fishing and great fresh produce."
