Editor's note: The recipe and introductory text below are from Aglaia Kremezi's book, The Foods of the Greek Islands. As Kremezi explains, this special cake is enjoyed on New Year's Eve or New Year's Day and has the potential to be lucky.
Vassilopita
On New Year's Eve or after the family lunch on the first day of the New Year, the father of the family cuts into this rich and aromatic cake, which has the year written in almonds on top and a lucky coin secreted inside. A piece is distributed to each family member, starting with the older ones, and whoever gets the symbolic coin is rewarded with a gift of money and starts the year with an advantage.
The basic recipe always contains orange juice, eggs, butter (a luxury in the old days) or margarine and brandy. Like our family, most islanders bake this fragrant cake just once a year. This is my mother's recipe.
Serve it on its own for breakfast or as a snack with coffee, tea or a glass of orange juice.
A creamy frozen eggnog mousse layered with paper-thin sheets of crisp chocolate. Be sure to make the chocolate disks and lace before making the mousse filling.

This recipe for turkey gravy is part of the Thanksgiving menu Chef Kent Rathbun created for Epicurious's Wine.Dine.Donate program. He serves it with Rosemary-Roasted Turkey .
Don't be nervous about making meatless mincemeat if you've never tried it before—it's a knockout combination of dried fruits and spices that adds wonderfully deep flavor to baked goods. Here, chunks of sweet pear and a handful of tart fruit create a pie that's fantastic with vanilla ice cream.
Adding the cranberries in three stages, along with crumbled nuts, results in a wonderful conserve with layers of texture and flavor. The turbinado sugar imparts subtle caramel undertones.
We couldn't improve much on traditional beef Stroganov, but we did decide to trade up: The usual small tenderloin pieces are replaced by whole steaks, which make for a more striking presentation on the plate.

This recipe is adapted from Ryan Magarian, the Seattle-based cocktail consultant behind Liquid Kitchen (www.kathycasey.com/liquid_kitchen). This autumn cocktail, with its palate-enlivening bubbles, is light enough not to overwhelm the delicate meat in Roast Turkey with Bacon and Applejack Gravy . The subtly sweet pear flavor echoes the presence of fall fruit in the gravy. For expert advice on pairing cocktails with food, click here.
Rich, creamy, suave flavor is the hallmark of this terrine. The shallots create their own sauce, so this is best served on a plate rather than on a slice of bread.
Terrine de Campagne
The straightforward character of this terrine reminds us of the words of Richard Olney, an influential American cookbook writer and editor who rusticated in the French countryside for almost 50 years. "A simple terrine," he wrote in his Simple French Food, "is never so good as when prepared in the easiest possible way, all of the ingredients of the composition mixed, pell-mell but intimately, together."

We've run at least a dozen different recipes for steak au poivre since our first one, in 1953 — and there's a reason why, even after we started adorning meat with chiles, salts, and dry rubs, we continue to return to this dish. Why? Because it's so darn good. And despite its somewhat macho image, this particular preparation tastes practically tony. (We found it a good excuse to use fine-quality peppercorns, such as Tellicherry or the smoky, meaty Talamanca del Caribe.)

One of my favorite classic bistro dishes is steak Diane, a paragon of quick cooking that finds steak swathed in a cream sauce mightily seasoned with mustard and enhanced with cognac. The next time you feel yourself feeling those bistro pangs, try my take on steak Diane, made with chicken instead of beef, and my version of the traditional sauce with shallots and mustard. Roasted garlic mashed potatoes is a perfect accompaniment; the potatoes will soak up the sauce. Or serve it with fries and an ice-cold Belgian beer.

This fabulous sorbet is a twist on the classic prune Armagnac ice cream. The prunes can macerate in the Armagnac indefinitely if kept in an airtight container in a cool, dark place.
The thickness and bitterness of your drink will depend on your chocolate's level of cacao, which varies among brands. We got great results with Ghirardelli, which produced a full-bodied cocoa (our preference for dunking the ginger doughnuts). We also used Lindt to good effect, but needed to add more cornstarch for extra thickening. Chocolate with more than 60 percent cacao will be too bitter.
Málaga Tapas & Bar gets its name from a city on Spain's southern coast — and from the authentic savory appetizers and snacks it serves with wine and other drinks, in the Andalusian tapas tradition. Málaga, located in Austin's trendy Warehouse District, is a favorite among the after-work and late-night crowds. This recipe for sangria comes from the restaurant's bar manager and resident wine expert, Merrill Frank.
