The Perfect Spring Dishes For A Backyard Brunch

I just got back from my favorite farmers' market

and I am super excited to make brunch.

I'm gonna take advantage of these beautiful

spring vegetables and I'm going to turn them into a quiche.

We've got asparagus, beautiful purple spring onions

and, of course, a lot of ricotta.

I roasted the asparagus and spring onions

with just the essentials, some olive oil, salt and pepper.

Quiche is really the perfect thing for this gathering

because it looks really impressive

but it's really easy to just make ahead.

No quiche would be complete

without a perfectly crimped crust.

So for this menu I wanted to hit things

that would look really impressive

but didn't actually take me a ton of time.

I'm having a bunch of friends over

and so I'm gonna put on a whole pot

of this Starbucks Veranda Blend,

it's great, it's really mellow, smooth, super easy to drink.

I'm a really big fan of the make ahead breakfast,

which means I do everything before everyone arrives

and then I get to hang out with my guests.

So by the time all my guests arrive,

all the food's already ready, the drinks are out,

the coffee's made and I look like a total hero.

I want to keep things super simple,

I'm just going to throw down a blanket,

bring out my food, everyone's already got their coffees,

we have some mimosas, it's the perfect backyard brunch.

Because I want this to feel like a real spring occasion,

I want the food to reflect that,

beautiful to look at, easy to eat outside

and, of course, delicious.

With a little planning ahead,

I'm able to pull off an impressive brunch

with hardly any work at all.
