Having besties over for dinner is one of Bon Appétit associate editor Christina Chaey’s favorite things to do (yup, her friendship comes with benefits). For her latest fête, she opted for Roasted Chicken with Crispy Potatoes & Salsa Verde to please every palate—because winner winner, chicken dinner, obviously. A few handy tools and small kitchen appliances from The Home Depot helped her prep and cook more efficiently so she could spend more time with her guests.
Her trick to roasting a whole bird in the oven: “I use a cast-iron skillet, which is great for its ability to maintain even heat,” Chaey says. But this isn’t your basic roast recipe. Chaey added a tangy touch of salsa verde. “The thing about salsa verde is you can throw all your ingredients in a blender and it’s ready to go,” she says.
Once the chicken was almost done, she seasoned her potatoes and popped them in an air fryer for the perfect crispy texture. But a great meal deserves a great table. Chaey always likes to dress things up with a bunch of fresh flowers and a striking setting. For this dinner, she went with more dramatic blue-toned rimmed plates. “I kept the napkins and silverware on the darker side because I like the way those contrast with the rims of the plates,” Chaey says.
