For Super Bowl 50, go all-out with our epic 50-ingredient nachos, or choose just one of the (much-simpler) five “zones” to make for game day.

The key to crispy nachos is to limit the number of ingredients that go into the oven with the chips. These start with three essential ingredients: a dollop of homemade pinto bean dip, sliced jalapeños, and plenty of grated cheddar.
WHEN I WAS YOUNG and growing up in Dallas, our favorite Mexican restaurant was a family-owned hole-in-the wall called Herrera's. It's now expanded to a much larger location, but in the 1970s it was in an old adobe building that had ten tables and to reach the dining room, you had to walk through the kitchen. Dallas went crazy for its soulful cooking, and the waits to get in were often long, but it was worth it.
We all had our favorite things to order: for my dad, it was the enchiladas, I loved the tamales, and my mom always went for the crazy nachos. Now, it always surprised me that my mom would order nachos since she ate them at home almost every single day for her lunch. However, she explained that while hers were good, Herrera's Crazy Nachos were the best.
In those days—before nachos became a sloppy stack of "chips and stuff"—nachos were a refined, simpler dish, with each individual tortilla chip topped with just cheese, beans, and jalapeños. So when Herrera's added taco meat, guacamole, and sour cream to their crazy nachos, it was considered quite daring and wild. That said, Herrera's crazy nachos were still elegant: each chip was a self-contained bite of all these fantastic flavors.
I admit that the name may seem a bit dated to some, as there's really nothing crazy about these nachos at all. But no matter what you call them, they're a fully loaded treat that is great to enjoy when watching games or sitting around and visiting with family and friends. And, if you're like my mom, they make a fine meal, too.

We subbed baked chips for fried. Same flavor, less fat.

This dip is a perennial hit. The last time I made it guests practically licked the bowl.

The original and superior version of nachos with cheese has the smoky spiciness of roasted chile and chorizo. While it can be served with tortilla chips, it is best scooped and wrapped into warm corn or flour tortillas. This makes a great simple lunch served with salad or soup.
PAT These young graduates don’t want a sit-down meal at their celebration. They want fun foods that they can eat (and spill all over your carpet!) while walking around and chatting with each other. Nachos fit the bill, and this Neely’s Bar-B-Que version has been a signature dish in our restaurants for over 20 years. Smoked brisket, pulled pork, or store-bought rotisserie chicken—they all work just fine. And for you non–meat eaters, grilled vegetables work as well!

If you ever find yourself wondering what to do with that last pound of barbecue, I’ve got a solution for you: nachos. This is the best damn appetizer in the world, especially good for things like Super Bowl parties and poker games. You can make your own salsa, of course, but I usually just use whichever brand I happen to have in the fridge.

Is this really dinner? It is casual, messy finger food, but it has beans, grain, and cheese, it’s quite filling, and kids love it. We like Cheddar, Monterey Jack, or Mexican cheeses such asadero and queso quesadilla for this recipe.
Gina: This appetizer—a Neely Señoritas’ Night favorite—couldn’t be easier to prepare (or more satisfying to eat). I use the meat from a store-bought roasted chicken, and combine it with tortilla chips and a homemade version of that molten guilty pleasure, cheese dip made from processed cheese (hola, Velveeta!). I also add Southwestern flavors, like green onions, pickled jalapeños, and cilantro, and a Neely finish, Barbecue Pico de Gallo, which gets its sweet, tangy undertone from our sauce (and comes together in minutes in the food processor). Chicken nachos are a great appetizer, especially when there’s a game on television, but they also make a fun end-of-week dinner with a couple of cold beers. So, whether the occasion is Señoritas’ Night (put on the salsa music, girl) or game day, these nachos are always a hit.

“Loaded” doesn’t have to mean loaded with calories. The combination of black beans, salsa, and nonfat Greek yogurt makes this version of nachos a multicultural feast without the fat. Be sure to buy ground turkey made just from turkey breast—not regular ground turkey, which is made from white and dark meat and skin. The fat and caloric content of the two is significantly different.

This recipe can be increased to serve any number of hungry people as a main course or appetizer. Chopped olives, chopped red or green bell peppers and kidney beans are also good in this dish.
Make the salad in a clear glass bowl to show off the colors. Pass some purchased red wine vinaigrette or buttermilk dressing alongside.
